Who says you have to spend hours in the kitchen to create a dessert that steals the show? Not you! For a classic Southern  pecan pie pie experience without the hassle of making your own crust, try these Lazy  Pecan Pie Pie Bars. Inspired by the traditional  pecan pie, these bars are simpler to make but taste just as heavenly as the original. Picture this: a buttery shortbread crust that melts in your mouth, topped with a rich, pecan-packed, gooey filling. Take them to your next family gathering or picnic and watch them disappear!

These pecan pie bars are already divine, but serve them with vanilla ice cream for an extra special treat! For a truly indulgent experience, top with whipped cream and a drizzle of caramel sauce. If you prefer a relaxing afternoon delight, pair with a steaming cup of tea or coffee.

Yields approximately sixteen bars

Ingredients:

  • 2 cups light brown sugar, packed
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup corn syrup
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon melted butter
  • 2 teaspoons vanilla extract
  • 1 1/2 cups chopped pecans

Instructions:

 

    1. Line an 8-inch square baking pan with parchment paper, leaving some overhang for easy removal. Preheat the oven to 350°F (175°C).
    2. Prepare the crust: In a medium bowl, combine flour, brown sugar, and salt. Using a  pastry cutter or your fingertips, blend in the cold butter until the mixture resembles coarse crumbs. Press firmly into the bottom of the prepared pan to form the crust.
    1. Bake the crust for about 15 minutes or until the edges are lightly browned. While the crust bakes, prepare the filling.
    2. In a large bowl, melt the butter and whisk in the corn syrup, granulated sugar, eggs, and vanilla extract until smooth. Stir in the chopped pecans.
  1. Spread the pecan filling evenly over the baked crust.
  2. Bake for an additional 20-25 minutes, or until the filling is set. Remove from the oven and allow to cool completely in the pan on a wire rack.
  3. Once cooled, use the parchment paper overhang to lift the bars out of the pan. Cut into squares and serve.

Tips and Variations:

  • For a twist, mix in chopped walnuts with half of the pecans or add  chocolate chips for a nutty flavor.
  • For added warmth, sprinkle cinnamon or nutmeg into the filling for a festive touch.
  • Store bars at room temperature for a few days in an airtight container, or refrigerate for a firmer texture.
